We only use spring-harvested Da Bai leaf buds from Fuding County, Fujian for the base tea, a variety usually reserved for white tea crafting. The buds are handpicked, then steamed and individually rolled by hand. The finished tea is then stored to await the blossoming of late summer jasmine.\u003c\/p\u003e\n\u003cp\u003eOnce jasmine flowers begin blooming, the tea is taken out of storage and baked to remove residual moisture. Fresh jasmine flowers are then layered on top of the dry tea in such a way that the tea absorbs the moisture and aroma of the flowers. This process of scenting is repeated over the course of ten summer evenings using fresh flowers for each round.\u003c\/p\u003e\n\u003cp\u003eThe result is an intense and persistent jasmine aroma over a base tea that is both sweet and smooth. This agricultural holiday welcomes the arrival of spring rains, and teas picked during the preceding two weeks are therefore referred to as “pre-rain” harvests.\u003c\/p\u003e\n\u003cp\u003eThe leaf buds were gathered before fully opening, then immediately pan-roasted: first lightly tossed, then firmly pressed and folded against the hot surface of a steel roasting drum. This pan-roasting process gives the tea its unique blade-like appearance and iconic toasted flavor.\u003c\/p\u003e\n\u003cp\u003eTo accentuate the sweetness of these early harvest leaves, we requested a longer, lower temperature roast on the tea, a process that imparts a natural nuttiness and buttery finish. Today, Sun Moon Lake produces the bulk of Taiwan’s black tea between three distinct cultivars: a pure-stock Assam, a native indigenous cultivar, and a hybrid cultivar named #18.\u003c\/p\u003e\n\u003cp\u003eOur #18 crosses pure-stock Assam with the native indigenous cultivar. Called \"Hong Yu\" or \"Red Jade\" by the local Taiwanese, #18 is the result of nearly 50 years of research by the Taiwanese Tea Research and Extension Station. This particular harvest was also aphid-bitten, triggering a natural enzymatic reaction in the plant that creates a flavor we call 'Mi Xiang' or honey fragrance.\u003c\/p\u003e\n\u003cp\u003eThis tea is organically grown and produced in Yuchih, the village that borders Sun Moon Lake. The leaves were picked mid-May, in the early morning.
