Its name means \"frozen summit\", in reference to what was, at the time, one of the highest elevation tea gardens in Taiwan. Today, tea is grown at far higher elevations in Taiwan, but Tung Ting retains its reputation as one of the first Taiwanese teas.\u003c\/p\u003e\n\u003cp\u003eOur Tung Ting was gathered at a little over 700 meters above sea level, in an area outside Lugu, Nantou County. We source exclusively spring harvested leaves for their fragrance and mouth feel. The process darkens the tea to create a rich and sweet tea that is smooth and fragrant.\u003c\/p\u003e\n\u003cp\u003eThe sweetness of our winter crop Tung Ting from an area near Lugu, Nantou County is the perfect foundation for a more concentrated roast. The slow roasting gradually caramelizes the natural sugars in the tea and sweetens it, while the high heat imparts a depth and complexity to its flavor and aroma. Called \"Hong Yu\" or \"Red Jade\" by the local Taiwanese, #18 is the result of nearly 50 years of research by the Taiwanese Tea Research and Extension Station. This particular harvest was also aphid-bitten, triggering a natural enzymatic reaction in the plant that creates a flavor we call 'Mi Xiang' or honey fragrance.\u003c\/p\u003e\n\u003cp\u003eThis tea is organically grown and produced in Yuchih, the village that borders Sun Moon Lake. The leaves were picked mid-May, in the early morning. As a result, the majority of osmanthus oolongs are actually produced by spraying low-grade tea leaves with an artificial osmanthus flavoring chemical, thereby reducing production cost.
