Although often referred to as herbal "teas", herbal infusions are not produced from the tea plant (Camellia sinensis); instead, they are crafted by drying the roots, leaves, flowers, or fruits of other plant species, and are more properly referred to as tisanes. Since they aren't crafted from tea leaves, herbal tisanes are also naturally caffeine-free.
